Evelyn's bartending career started in Vancouver and quickly got recognition in the Canadian bartending scene with her unique approach to flavours. Throughout the years she has accumulated pedigrees such as: BarSmarts certification, WSET, Certified Specialist of Spirits, while finding success in multiple national & international cocktail competitions including a recent win at the Global Beefeater MIXLDN championships; representing Canada against 31 other countries and was crowned first in the world for her mixing skills.  

She runs the bar program at PrettyUgly, and is the Canadian coordinator for Speed Rack, a charity speed bartending competition for female bartenders with proceeds going to breast cancer education and awareness. She believes that cocktailing is about the ultimate hospitality experience. She has traveled around the world promoting Canadian cocktail culture, and is thrilled to be involved with its rapid growth.

Zak Doy (Figo)

Zak Doy has been in the spirits business a long time. From the early days of slinging bottles in clubs and sports bars, this bartender knew he had found his calling. In 2012, Zak won his first cocktail competition, beating out some great bartenders and ultimately one of his very first bartending mentors. It was a defining moment in setting out to become an architect of great cocktails and elixirs. Currently, Zak continues to work as an independent consultant with his co-founded company, The Wizards of the West, spreading the love of fine spirits in Toronto and teaching a new generation of great bartenders. In addition, Zak continues building strong social media platforms to share his vision of cocktails and culture with the world.

Tyler Newsome (Bar Raval)

My love of cooking has always inspired the way I create drinks.  I enjoy exploring local markets for new ingredients and finding inspiration in unfamiliar styles of cuisine and cooking.  My current obsession is fermenting fruits with different brewing yeasts which was sparked when I found a Tomato beer recipe in an old Appalachian cook book.  I currently work at Bar Raval, love Weiner dogs and laugh a lot!

Chantelle Gabino (Chantecler)

Chantelle is a born and raised Canadian bartender with over 7 years of experience behind a bar and over a decade in the hospitality industry. Regaining touch with her roots of growing up in beautiful British Columbia, her recent projects incorporate incentives to embrace self-sustainability, as well as ingredients and practices aimed at showcasing mother nature’s offerings.  Utilizing her long standing love of food & drink, as well as her Fine Arts background she was named National winner of Bombay Sapphire's "Most Imaginative Bartender, 2016". Currently at The Drake hotel and Chantecler, as well as a Bittered Sling Ambassador, Chantelle is always ready and willing to shake things up.

 

Sally Gillespie (Pretty Ugly)

Growing up in the hospitality industry in Toronto has really shaped my passion for local flavours and inspired me to explore my creativity when I’m making drinks. 

My favourite part of my job is exploring the possibilities presented by unusual/funky spirits, and adapting to evolving palates.
